The Best Damn Kale You've Had Lately

Looking to add more greens to your diet? Looking for a yummy and healthy side dish to make next to any protein or perhaps at a BBQ? This is easy, SURPRISINGLY delicious and very quick to make! I only used one bunch of kale which was the perfect amount for Pete and I. I recommend using one bunch per two people.
Ingredients:
1 Bunch Fresh Kale (I used Lacinato)
1 half lemon
2 TBSP butter
Shaved Parmesan
Salt and Pepper to taste
Remove the stalks, rip of the leaves and then blanch the kale. I simply throw it in boiling water for a few minutes before finishing it in the butter.
Once the kale is tender (typically 2-3 minutes), drain the water and melt butter in the same pot on low.
Stir fry a couple of minutes until butter is melted is well incorporated throughout the kale.
Add the juice of 1/2 lemon. I had a small lemon that wasn't super juicy. If you're not a huge lemon fan or you have a large very juicy lemon, 1/4 would be enough.
Add salt and pepper to taste.
Finish with grated parmesan and serve warm.
